Happy St David’s Day everyone! Today is the day of the Welsh Cake. These beautiful airly little drops of deliciousness are everywhere in Wales today and I hope everyone has the chance to enjoy them. Coconut & cashew biscuits
They may not look pretty but these lumpy little cashew and coconut biscuits are delicious and a firm favourite with Rob. Plus they go perfectly with a coffee. Thank you to Gail for donating this recipe (although I have doctored it slightly according to what I had in my cupboards). Makes 6 biscuits so double up if you are catering for more.

Rye chocolate brownies
Rye is not the typical flour I would use for baking, particularly not for sweet baking, so when the lovely folks at Talgarth Mill (you know them, they have a traditional water mill and provide us our wholemeal, rye and spelt flours) gave us this recipe I had to give it a go myself. And…I can honestly say it was a pleasant surprise. The rye works really well with the chocolate in these brownies. I did use less chocolate than the original recipe and it turned out great. Chocolate fruit & nut bars
Have you ever tried one of those Nakd bars? They are pretty tasty but unfortunately they come wrapped in plastic. So, thanks to one of our lovely customers, I am able to share with you a recipe for your very own fruit bar, and these truly are ‘naked’. This is a really simple recipe which is gluten free, vegan, and sugar free. But I assure it, they don’t taste well behaved. Eating these gives me my sweet snack fix for the day. The dates give these bars a deliciously fudgey taste and I assure you they are a great way to pack in some healthy sugars if you are planning on climbing any mountains.

Chocolate lentil brownies
This is a recipe which I have been lucky enough to eat (thanks Mum) although haven’t tried making yet myself. The brownies are deliciously soft and fluffy, so much so that I almost called this post “Squidgey little chocolate things” but that didn’t sound as nice.
Chocolate seed bars
I am a complete chocaholic so when Pamela sent over this recipe for a chocolate snack which is low in sugar but high in good fats and protein I knew it was going to be a winner for me. It is also very easy and quick to make with no baking. Thank you Pamela!
