Chocolate seed bars

I am a complete chocaholic so when Pamela sent over this recipe for a chocolate snack which is low in sugar but high in good fats and protein I knew it was going to be a winner for me. It is also very easy and quick to make with no baking. Thank you Pamela!

Ingredients:
150g dark chocolate
50g coconut oil – refill in store
100g quinoa
100g chia seeds
100g sesame seeds
100g pistachios (ground) – you can also use ground almonds
1 tbsp cocoa powder

Melt the chocolate and coconut oil together in a saucepan over a low heat. Once melted, set aside.

Put a large frying pan over a medium heat and add the seeds to toast. Keep the seeds moving around to make sure they don’t burn. You will smell when they are ready as they have a lovely nutty aroma but it should be around a couple of minutes.

Mix the cocoa powder with the chocolate mixture and stir in the seeds. Add the ground pistachios (I used ground almonds as I had them in the cupboard).

Transfer the mixture to a baking tray and leave in the fridge to set for around 2 hours. Slice into 20 pieces.
If you use 85% dark chocolate, each slice will be around 1.5g sugar and 160 calories.
