Happy St David’s Day everyone! Today is the day of the Welsh Cake. These beautiful airly little drops of deliciousness are everywhere in Wales today and I hope everyone has the chance to enjoy them. They may not look pretty but these lumpy little cashew and coconut biscuits are delicious and a firm favourite with Rob. Plus they go perfectly with a coffee. Vegan and gluten-free too and all the ingredients are available plastic free. This will make enough pie for 6 hungry people or 8 more moderately sized portions.

Making bread by hand is something which has, understandably, become less commonplace over time. It is a process which is ideal for someone who is in the house all day doing lots of different bits and pieces. Now, bread is such an easy, cheap staple that few of us even think about making it, and those that do often opt for a bread maker. But I have found the process of making bread wholly satisfying and the result is more delicious than any of the other alternatives.
