It is the time of courgettes so, unsurprisingly, they feature in pretty much all our meals at the moment and this lentil lasagne is no exception. To me, lasagne is a good all round favourite. Hearty and filling, the combination of lentils, vegetables and cheese are everything I want in a meal. And it is easily adaptable to the season. Elderflower cordial

Elderflower cordial

Elderflower cordial is perfect for sunny summer days as it is so fragrant and refreshing. It’s a good lockdown activity too. Make sure to use your elderflowers pretty soon after they have been picked. The are best picked early in the morning on a warm day. Aim for flower heads that have only recently opened and arent yellowing/browning. Always make sure to leave several open flowers on each tree for the insects, we only ever pick 2-3 from a tree before moving on 🙂 Continue reading Elderflower cordial

Carrot & lentil burgers

Veggie burgers have been a bit hit and miss in my experience but these went down well in our house. In fact, I think Rob mentioned how much he was enjoying them three times during the meal! Pulled jackfruit wraps

Oh this meal is so good. I am a recent convert to jackfruit but I am convinced this meal will delight meat eaters and vegans alike. The jackfruit gives a wonderful texture and the flavours of the sauce are lovely. It does take a bit of planning to make the wraps but definitely worth it.
