Authentic Welsh cakes

Happy St David’s Day everyone!  Today is the day of the Welsh Cake.  These beautiful airly little drops of deliciousness are everywhere in Wales today and I hope everyone has the chance to enjoy them. But if not, why not make your own?  This recipe is a tried and tested, passed down the generations recipe and can be made with entirely plastic free ingredients.  The trick is to have the proper equipment for this.  A good, old fashioned, thick based griddle pan is essential for them to work properly.  Good luck. Coconut and cashew biscuits

Cashew and coconut biscuits

They may not look pretty but these lumpy little cashew and coconut biscuits are delicious and a firm favourite with Rob.  Plus they go perfectly with a coffee. Thank you to Gail for donating this recipe (although I have doctored it slightly according to what I had in my cupboards).  Makes 6 biscuits so double up if you are catering for more.

Let’s face it, it’s cold outside and Christmas is over. We all want nourishing, comforting food at this time of year. Well, this shepherd-less pie is just the thing to satisfy your comfort cravings. Vegan and gluten-free too and all the ingredients are available plastic free. This will make enough pie for 6 hungry people or 8 more moderately sized portions.

Rye chocolate brownies

Rye is not the typical flour I would use for baking, particularly not for sweet baking, so when the lovely folks at Talgarth Mill (you know them, they have a traditional water mill and provide us our wholemeal, rye and spelt flours) gave us this recipe I had to give it a go myself.  And…I can honestly say it was a pleasant surprise.  The rye works really well with the chocolate in these brownies.  I did use less chocolate than the original recipe and it turned out great.

Homemade mincemeat

I often feel mincemeat is the herald of Christmas time.  It benefits from being made a good few weeks in advance of the event (the longer the better) but the homemade stuff is worth waiting for.  As well as being much more delicious, when you make mincemeat yourself, you know exactly what has gone into it, can leave out anything you don’t want, and, even better, you can reuse a jar to keep waste down! Tomato and coconut curry

Coconut tomato curry

This tomato and coconut curry is bloomin’ delicious. It doesn’t sound like it has much to it but the combination of ingredients works so well and makes for a satisfying and filling dinner. A massive thank you to Melinda for passing this on to us! This curry is now a firm favourite in our house and is quick enough to fit in after a day at work and even better, all the ingredients are available plastic free.
