Oh this meal is so good. I am a recent convert to jackfruit but I am convinced this meal will delight meat eaters and vegans alike. The jackfruit gives a wonderful texture and the flavours of the sauce are lovely. It does take a bit of planning to make the wraps but definitely worth it. The original baked beans

Baked beans

Conventional tinned baked beans are widely considered a cheap, quick, easy meal but I rarely hear them described as delicious. And I don’t think many people consider them to be particularly nutritious. These baked beans are different! Packed full of flavour and with plenty of vegetables, they make a hearty, filling meal and, similar to their conventional cousins, they can be cheap, quick and easy to make. Coconut and cashew biscuits

Cashew and coconut biscuits

They may not look pretty but these lumpy little cashew and coconut biscuits are delicious and a firm favourite with Rob.  Plus they go perfectly with a coffee. Thank you to Gail for donating this recipe (although I have doctored it slightly according to what I had in my cupboards).  Makes 6 biscuits so double up if you are catering for more.

Vegan and gluten-free too and all the ingredients are available plastic free. This will make enough pie for 6 hungry people or 8 more moderately sized portions.

I often feel mincemeat is the herald of Christmas time.  It benefits from being made a good few weeks in advance of the event (the longer the better) but the homemade stuff is worth waiting for.  As well as being much more delicious, when you make mincemeat yourself, you know exactly what has gone into it, can leave out anything you don’t want, and, even better, you can reuse a jar to keep waste down!
