Cauliflower & potato curry

This is a lovely, warming and easy curry to make and uses ingredients which are almost always ready and waiting to be used up in our house.  You can make it as spicy as you like by adding more curry powder but the recipe below has a gentle warmth to it which went down a storm with Rowan (15 months old now!). Classic Victoria Sponge

Victoria sponge

I always think it’s the simplest recipes which benefit most from really good quality ingredients to become something truly special.  We picked up some of our new stoneground plain flour and, to put it to the test, I made this Victoria sponge.   The unbleached flour gives the sponge a delicious golden hue.  It rose beautifully and has a gorgeous flavour.  Simple, but also infinitely special.  Continue reading Classic Victoria Sponge

Lentil lasagne

lentil lasagne

It is the time of courgettes so, unsurprisingly, they feature in pretty much all our meals at the moment and this lentil lasagne is no exception. To me, lasagne is a good all round favourite. Elderflower cordial

Elderflower cordial

Elderflower cordial is perfect for sunny summer days as it is so fragrant and refreshing. It’s a good lockdown activity too. Make sure to use your elderflowers pretty soon after they have been picked. The are best picked early in the morning on a warm day. Aim for flower heads that have only recently opened and arent yellowing/browning. Always make sure to leave several open flowers on each tree for the insects, we only ever pick 2-3 from a tree before moving on 🙂 Continue reading Elderflower cordial

Carrot & lentil burgers

Carrot & lentil burger

Veggie burgers have been a bit hit and miss in my experience but these went down well in our house. In fact, I think Rob mentioned how much he was enjoying them three times during the meal! Definitely a winner. And they go wonderfully well with some sweet potato chips, mixed summer salad and gorgeous wall to wall sunshine. Enjoy! Continue reading Carrot & lentil burgers
