Happy St David’s Day everyone! Today is the day of the Welsh Cake. These beautiful airly little drops of deliciousness are everywhere in Wales today and I hope everyone has the chance to enjoy them. But if not, why not make your own? This recipe is a tried and tested, passed down the generations recipe and can be made with entirely plastic free ingredients. The trick is to have the proper equipment for this. A good, old fashioned, thick based griddle pan is essential for them to work properly. Good luck.
Ingredients:
225g self raising flour
100g butter
50g caster sugar (plus some for sprinkling)
50g mix of currants and sultanas
1 egg
3 tbsp milk
Method:
Rub the fat and flour together until you have a crumb like consistency. Add the egg, sugar and fruit and enough milk to make a thick dough.
Roll out the dough and use a biscuit cutter to cut out the welsh cakes.
Place on a hot griddle pan for a couple of minutes on each side.
Sprinkle with sugar
