Super Quick Satay Noodles

Not sure what to have for tea? These super quick satay noodles will tick ALL the boxes. Packed with vegetables, protein from the peanut butter and with a lovely chilli kick it was what all three of us needed. AND, the best bit, it is incredibly quick and easy to make.

Ingredients

2 noodle nests
4 tbsp peanut butter (the good stuff, from Natural Weigh ๐Ÿ˜œ)
2 tbsp soy sauce (refill in store)
2 tbsp sweet chilli jam (from the Preservation Society – we have it in store)
Lump of ginger (grated)
Red pepper
Courgette
Carrot
Spring onions

Method

Boil the noodles for 4mins.
Mix the peanut butter, soy sauce and sweet chilli jam together with a splash of noodle water to loosen.
Chop the vegetables nice and thin and fry, with the ginger for 2-4 mins (reserve the green from the spring onions)
Add the noodles.
Add the sauce.
Mix to coat and serve straight away topped with the green from the spring onions.
