They may not look pretty but these lumpy little cashew and coconut biscuits are delicious and a firm favourite with Rob. Plus they go perfectly with a coffee. Thank you to Gail for donating this recipe (although I have doctored it slightly according to what I had in my cupboards). Makes 6 biscuits so double up if you are catering for more.

Shepherd-less pie
Let’s face it, it’s cold outside and Christmas is over. We all want nourishing, comforting food at this time of year. Well, this shepherd-less pie is just the thing to satisfy your comfort cravings. Vegan and gluten-free too and all the ingredients are available plastic free. This will make enough pie for 6 hungry people or 8 more moderately sized portions.
Tomato & coconut curry
This tomato and coconut curry is bloomin’ delicious. It doesn’t sound like it has much to it but the combination of ingredients works so well and makes for a satisfying and filling dinner. A massive thank you to Melinda for passing this on to us! This curry is now a firm favourite in our house and is quick enough to fit in after a day at work and even better, all the ingredients are available plastic free.

Chocolate fruit & nut bars
Have you ever tried one of those Nakd bars? They are pretty tasty but unfortunately they come wrapped in plastic. So, thanks to one of our lovely customers, I am able to share with you a recipe for your very own fruit bar, and these truly are ‘naked’. This is a really simple recipe which is gluten free, vegan, and sugar free. But I assure it, they don’t taste well behaved. Eating these gives me my sweet snack fix for the day. The dates give these bars a deliciously fudgey taste and I assure you they are a great way to pack in some healthy sugars if you are planning on climbing any mountains.

Plant based chocolate cake
I made this cake as a dessert when we had guests over and it was an absolute hit. I had never tried vegan baking before so I was a bit hesitant over whether it would all work but it did. Due to the amount of fruit in this plant based chocolate cake I feel like it can even be called healthy too ;). Even better, most of the ingredients are available from our shop plastic free! It is a bit faffy and perhaps not the most elegant cake but well worth the effort for the taste.
Mixed bean chilli
This chilli may not look beautiful but it is a quick and easy go to meal for us. It takes a little bit of planning because of the dried beans but it never puts me off and is such a rewarding, warming meal that I always make loads and eat it for lunch for the rest of the week. You can always replace the dried beans with tinned to speed things up.
