Homemade Digestive Biscuits

Anyone else get biscuit cravings?  But they’re always wrapped in pesky plastic. Well it turns out it is pretty easy to make digestive biscuits at home, and you can dip them in chocolate too :).

Ingredients:

75g butter

100g wholemeal flour

65g steel cut oats

1/4 tsp bicarbonate of soda

35g dark brown sugar

2 tbsp wheatgerm

1 tbsp oat milk

Method

Mix the butter and flour in a food processor until you have a fine, breadcrumb like consistently.

Add the remaining ingredients and use your hands to bring together to form a dough.

Place the dough on a reusable baking sheet and place a second baking sheet on top. Roll out the dough between the baking sheets until it is around 5mm.

Place the baking sheets on a baking tray and put in the fridge for at least 30 minutes (longer isn’t a problem).

Remove from the fridge and, using a round cutter, cut out your biscuits. Return to the fridge while you preheat your oven to 170 degrees.

Bake the biscuits for 10-12 minutes.

Enjoy your digestive biscuits as you like. I dipped mine in chocolate but you could cover them in icing, and decorate with nuts and seeds or just eat them plain.

Just baked the digestive biscuits from your recipe, and they have turned out to be delicious!
I didn’t have any wheatgerm, so that was substituted with yeast flakes, it worked really well.
