Christmas Cake Kit – Gluten Free Version

Looking for an easy way to beat the fuss of the festive season? This Christmas Cake Recipe Kit has the ingredients you need, in exactly the right quantities. Just follow the instructions (and add a couple of other bits and pieces) and you’ll have yourself a completely delicious and smashingly simple Christmas cake for the whole family to enjoy.

The kit includes 4 bags of pre-weight ingredients. Bag 1 (450g currants, 175g sultanas, 175g raisins, 50g glace cherries, 50g candied peel), Bag 2 (225g demerara sugar), Bag 3 (225g gluten free bread flour, 1/2 tsp salt, 1/4 tsp ground nutmeg, 1/2 tsp mixed spice), Bag 4 (50g flaked almonds). All ingredients are organic.

Extra to buy: 3 tbsp brandy, 225g unsalted butter, 4 eggs, rind of 1 lemon.

Preparation time: soak fruit overnight, then 20 mins

Cooking time: 4 hours

Makes 1 20cm diameter cake.
